Alright.. I'm finally getting to it.. EPIC turkey meat balls with kale salad.. You asked for it and since my recipe video was a fail, you'll get it here.
This recipe is really super simple and these 'meat balls' are just as awesome cold..
Or is it just me who has a thing for cold food? Sometimes I'll make food just so that I can put it in the fridge and have it cold the next day. Does anyone else do this? Either way, I never claimed to be normal.
I love leftovers.. and these are especially good.. I love meat balls bc you can use whatever meat you want. Turkey, beef, pork, even fish. You can get the fish 'meat' at your local fish guy - if you have one.
Here's what you'll need..
- 1/4 pound of ground turkey
- 1 clove of garlic
- 1/2 onion
- 1 egg
- 1 tsp arrow root (optional)
- salt, pepper, paprika, cayenne, ( I used a harissa blend from whole foods*)
*I have no idea what that means but I was looking for paprika one day and they didn't have it so I grabbed the next best thing.. which was that :D lol
Chop op your garlic, onion and dill, and add everything in a bowl and mix it well..
Doesn't get any easier.
I like adding arrowroot as it's gluten free and gives it a little more of a gooey consistency which i like..
If you don't have that, you can always use 1 tsp of quick oats - (before I became a health freak, that's what I used to do - and still sometimes do :D ). Arrowroot is just good for so many things that you should go get it as a staple in your kitchen. It's super easy for your stomach to digest and has no flavor. I use it in my pancakes and a lot of other things as it's like flour/ potato starch but the healthy version :)
Mix it all well and heat up some olive oil on a pan and shape your meat into little flat 'balls' and cook at low heat till they're done. The smaller you make them, the faster it is and the cuter they are :D
- organic kale - make sure to wash out all the bugs!
- 1 handful of raw almonds
- 2 tbs olive oil
- 1 tbs apple cider vinegar
- 1 tsp raw honey
- 1 handful raisins or more
- juice of 1/4 - 1/2 a lemon - depending on size
In a bowl you wanna whisk the lemon juice, honey, ACV & olive oil. Make sure it's WELL combined before you do anything else.
Then you wanna rip the kale into little pieces leaving the stem! Through it in your bowl and when it's all done, massage the kale with your hands so that you break down the fibers and the kale becomes SOFT! Chop up the almonds and through it in there along with the raisins and you're done.
This is just soooo goood I'm drooling just thinking about it. Just make sure the bugs are gone :D If you're a HFLC person I'd recommend using 5 tbs of olive oil which I usually do but i know some of you guys are concerned about the fat, which you really shouldn't be, but that's for another blog.
