Sweet Potato Sliders

When I make burgers at home or eat out, I usually go for a lettuce wrap. This time I wanted to do something a little different though.. So I precent... Sweet Potato Sliders :D
As I've had a kitchen for the last few weeks I decided to get creative with some recipes. I've got a serious food obsession and I LOVE cooking in case you didn't know by now.. 



  • 1 Big Sweet Potato
  • 1 Red Onion
  • Cherry tomatoes
  • 1/2 lb Ground Beef or Bison
  • Sunflower sprouts or any other kind
  • 1 Bell Pepper
  • Bacon
  • Green Pesto



  • Preheat your oven to 425 F. and cut your sweet potato into 1/4 inch thick slices and place on a pan with parchment paper. Make sure the potato is somewhat even in size and not too crooked! Drizzle with olive oil and make sure they're covered on both sides. Cook for about 15 min and flip them over and cook for another 15 min.
  • Meanwhile, cook your bacon and prep your beef patties so they fit the size of your sweet potato. Make sure the patties are really FLAT as they swell up in the middle when you cook them. A good tip for any time you're cooking burger patties ;) Make sure to add some good seasoning (I prefer Braggs 24 herbs & spices seasoning & salt & pepper). Cook them in the bacon fat and place on a plate when they're done.
  • Cut and prep the rest of your ingredients and assemble it all when you're done and make sure to try my Green Pesto Recipe with this one :)

I like to keep it simple and this pesto recipe definitely falls in that category.. Pesto can be made with so much more than just basil which is the typical pesto recipe you'll find.. I 'accidentally' made this awesome version using everything green I had in the fridge! When I make something good, I tend to eat it all day everyday till somehow one day I forget it even exists. Anyone else?.. Currently I eat this stuff with literally everything. Meat with pesto, salad with pesto, sweet potatoes with pesto, you name it, I'll find a way to add it. 



  • 1 bunch/ big handfull basil
  • 1 bunch cilantro
  • 1,5 - 2 bunch fresh italian parsley 
  • 1/2 cup olive oil
  • 1/2 tsp salt
  • 1-2 Cloves of Garlic (depending on how spicy you want it/how bad you wanna smell ;P )
  • 0.25lb Pine Nuts
  • Juice from 1 lime or 1 lemon




On a dry pan, lightly roast your pine nuts til they get golden brown

Add all your ingredients in a food processor or a Vitamix and give it a go on medium speed using the tamper. 

Blend till it has a smooth consistency but not too smooth as you still want some 'chunks' in there..  and that's it...

3 Ingredient Omelette

Some days.. When you're really really hungry... and the store is closed and you open the fridge... and all you have is this.. !!   = Time to get creative..

I remember when I was a kid and went to school, one of our classes was cooking (I'm not sure if you have that type of classes in America but in Denmark we do/did, and I loved it). One of my favorite things was when it was 'empty the fridge day' and that's exactly what we had to do. Grab the ingredients that were left in the fridge and let our imaginations run wild.. I mean how awesome is that?  I loved it because I could create whatever I wanted.. Usually we would have a lot more than just 3 ingredients to work with but hey.. That's the deal with 'emptying the fridge' and so I did today..

It's kinda how I feel about life..  You gotta learn how to work with what you've been givin' till you're able to add more 'ingredients', which will come when the time is right.. 'the store will open again, but for now.. empty the fridge and work with what you've got'.. 
So here's how it went..

Use whatever veggies you have and CHOP CHOP!!!

Grab a few eggs.. or 3..

Add salt and pepper and whisk up your eggs!


Sauté your veggies on low heat, - start with your garlic. If your pan is too hot you'll end up slightly burning your garlic (which is when it turns brown) and it will have a bitter taste that can ruin any dish!
Cook until veggies are slightly soft and transfer into a separate bowl!

Poor in your eggs and let it cook on low heat..

Once it's almost cooked but not completely.. Add your veggies back on one side of the omelet and wait a few more minutes depending on how cooked you want your eggs. Cooking it too long can make it too stiff and dry which I'm personally not a fan of.

A 3 ingredient omelette... Simple.. 
Sometime you just have to get creative when the store is closed and you got close to nothing left in the fridge... :)
