Anything oven roasted is the most simple thing ever to add to your dinner. Beets I especially LOVE. Just make sure you're not wearing white while handling these babies :P lol. I made a HUGE tray, or 2 actually, as they had fresh beets at the farm we usually go to - you know which one if you follow my snapchat. We got 12 lbs of beets and roasted them all up and there was nothing left at the end of the evening. I roasted some garlic to go with these and a whole duck. Duck might not be that common here in The States but it's a very common thing to eat in Denmark. I'll put it like this.. If I could only eat one type of meet for the rest of my life, it would be duck! That' show much I love it.
But.. as for the beets.... Wash, peel and cut them into cubes and pop 'em in the oven on 420 for about 30-45 min. I like mine well roasted and almost crunchy so I'll sometimes leave them in for 1hr. Try adding rosemary or thyme and some olive oil for an extra kick. If you like it plain, salt and pepper will do :)

Beets are like red spinach. That in itself should be enough.. But this vegetable is one of the best sources of both folate and betaine. SUPER powerful. They are loaded with vitamins A, B1, B2, B6 and C and has anti cancer properties. Drinking beet juice regularly may be beneficial in the prevention and cure inflammations and detoxing the liver. It's SUPER healthy and amazing as a blood purifier. We've been juicing so many beets along with all the greens from the farm and you know how your pee turns read when you eat beets... yeah.. I need not say more!
Also, it's low in calories, if you count that stuff... Enjoy your beets.
