I like to keep it simple and this pesto recipe definitely falls in that category.. Pesto can be made with so much more than just basil which is the typical pesto recipe you'll find.. I 'accidentally' made this awesome version using everything green I had in the fridge! When I make something good, I tend to eat it all day everyday till somehow one day I forget it even exists. Anyone else?.. Currently I eat this stuff with literally everything. Meat with pesto, salad with pesto, sweet potatoes with pesto, you name it, I'll find a way to add it.
- 1 bunch/ big handfull basil
- 1 bunch cilantro
- 1,5 - 2 bunch fresh italian parsley
- 1/2 cup olive oil
- 1/2 tsp salt
- 1-2 Cloves of Garlic (depending on how spicy you want it/how bad you wanna smell ;P )
- 0.25lb Pine Nuts
- Juice from 1 lime or 1 lemon
On a dry pan, lightly roast your pine nuts til they get golden brown
Add all your ingredients in a food processor or a Vitamix and give it a go on medium speed using the tamper.
Blend till it has a smooth consistency but not too smooth as you still want some 'chunks' in there.. and that's it...
