I guess I don't really need much of an explanation as to why I want to share these with you, do I?
WHAT YOU'LL NEED
- Bacon (nitrate free)
- Butternut Squash
Make sure you're squash is organic if possible and check your bacon for nitrates or any other preservative an unnatural ingredients. Get it from a local organic farm if possible.
Cut peel and prep your butternut squash..
Place on a pan and pre cook for 15 min at 425 F.
Take them out and carefully wrap a piece of bacon around each piece - carefull - they're hot... I cut the bacon in half so it fits the pieces better.
Pop them back in the oven and cook for another 15-20 min till the bacon has your desired texture.
And that's it.. These are also really good the day after.. (or is it just me who has an obsession with cold food?) I love to grab these on the go and bring as a lunch snack.. :) Hope you find as much enjoyment from these as I do :)
