Gluten Free Pancakes/Crepes // 5 Ways


So basically.. These are the famous '3 ingredient pancakes'.. You've probably even heard of the 2 ingredient pancakes which consist of just 1 banana and 2 eggs. The 3rd ingredient is debatable, some say it's cinnamon some choose something else.. And sure.. that's as simple as it needs to be but why not make it even better :) You might've seen me make these in my vlogs as we pretty much eat pancakes for dinner every night.. Our kids are gonna live the dream.. haha.. I know I wanted to eat pancakes for dinner every day when I was a kid. So anywho.. today.. I'm gonna share with you how you CAN eat pancakes every day if you want to and NOT feel guilty. And as a bonus, I'll give you a few variations or 5 to choose from :) 

*recipes are for 1 person



1 banana, 2 eggs, a dash of cinnamon (or leave out the cinnamon)
*This recipe needs to be made into tiny pancakes as you won't be able to flip them if you make a big one - the texture is way too soft and runny and you'll end up with scrambled pancakes, still taste the same but let's not go there... These are super sweet if you use a ripe banana (which you will.. ofc). Mash the banana with a fork and then whisk in the 2 eggs using your fork. 


1 banana, 2 eggs, 1 big heaping tablespoon of arrow root
*Blend it all for a few sec in your blender. This version can be made into crepes and will give you the typical crepe/pancake texture that's a little more 'chewy'

1 banana, 2 eggs, 2 heaping tbsp arrow root, 1 tsp cinnamon, 1/2 tsp vanilla, 1/2 tsp real salt and a dash of cardamom
*Add all your ingredients (except arrowroot) to you blender and blend on low speed. You don't wanna get too much air in it. This only takes a few sec and as it's blending, add your arrow root. I do it this way so I avoid having it stick to the sides of the blender. If you're really lazy, just go ahead and ad it all at once :) blend till it's all combined and no longer.


Same as option 3 but add 3tbsp of cream cheese
*THIS version is AWESOME. We rarely eat creme cheese but if an when we do, I make sure to make these pancakes. It's high in protein if you aren't scared of the dairy and it has a really nice chewy consistency which I LOVE! Oh goodness.. Anything chewy and I'm sold. (add as much arrow root as you want, it only comes down to the desired texture)

Did you spot the cardamom in this picture? It seems to be like brusselssprouts, you either hate it or love it ! So if you hate it, don't touch it, but if you love it, I'd highly recommend adding just a dash to your pancakes as a super awesome secret ingredient :)

*cook in olive oil or coconut oil (or even buffalo tallow if you're as lucky as we are)



why not add a vegan option just for the heck of it.
1 cup almond milk, 1 banana, 1/2 cup of oats
*Blend it up and you're good to go! Grab the pan and fry these little babies in some olive oil.. (use gluten free oats for GF option)
I used to make these before I came up with the above recipe. 



There are 100 ways of making banana pancakes but these are some of my favorites and all time go to depending on which ingredients we have.

Making healthy super simple can be fun and it's probably even faster than to rip open a box of pre made, store bought, pancake mix that you add water to! No excuses here.
Just get your 3 ingredients, a blender, and eat all the pancakes you want :)
